Does anyone know of a good chart somewhere that lists how much protein is in what? For instance, how many grams of protein are in an apple, a pear, etc? I have to bulk up on protein to help lessen the swelling I'm experiencing but I can't find a good chart anywhere.

It's not a chart, but if you sign up to http://www.fitday.com it will tell you everything that's in food, including nutrients. If you enter everything you're eating, it will even give charts of percents (ie, percent carbs, fat and protien and there are pages to track your intake of vitamins and nutrients).
It's a handy site if you're tracking things and it's good just to input data to see what you're eating has in it.
