If you could change careers and be anything that you wanted without concern for money, what would you do?

I'd love to have my own travelling programme like "5 star spas" or "famous getaways" or anything like those in P&A... :)

I'd be a bartender or waitress on a warm tropical island somewhere.
Cocktail anyone???
... on the serious side... I don't know, right now I like my job, but I'd like to work part time since I've got 2 kids... Not possible though in my line of work.

I have two. The first one would be writing.
The second would be motivational speaking on a consultant basis for small companies that can't afford to send their employees to the high-buck folks (and tend to need it more than the companies that do have the funds!).

I'd own my own store. Either a card/invitation business. Or a children's boutique. Maybe one day I will have the money to do it.

I'd be a ski instructor. Of course I'd have to become a better skier first :).

I'd love to work in the medical field. I already have my EMT certification so maybe go for my Paramedic or into nursing. If I can only hit the lotto, I'd quit my job and go back to school full time for one of those! :)

I'd like to run a children's book store, like the one Meg Ryan owns in "You've Got Mail".

I would love to own a children's boutique and bookstore--and have enough money so that I wouldn't have to worry about whether or not the store was profitable.

I love to work out! My favorite thing to do when I'm not pregnant is go to my Jazzercise classes! One of these days I'm going to get my certification and become a Jazzercise instructor and teach my own class.

I think Kim's got the right idea!
One thing I've thought about a few times would be a Cookbook/Cooking store. A regular bookstore specializing in cookbooks, with some cooking classes (and cocktail classes!) held inside.

As far as work outside the home, I'd love to be a dance teacher. Oh heck, I'd love to be a ballerina! Seeing as I'm 5'1 and not rail-think that will NEVER happen!!!!

I would love to own a store and not care whether or not its too profitable. I wave back & forth about it being a children's boutique, a bookstore, a gourmet cooking store, or a wine store. I promised DH that one day, if he puts enough into retirement funds and we are making a good living and have a padded savings account, we can open our own business. He dreams of it and promised that if I "let" him, it can be whatever I want (though he would love if it was wine or beer related!)

I'd like to travel to third world countries to teach natives (who wished to learn it) the English language. It seems like this would be a rewarding job.

An animal trainer or rescuer - maybe working for the Seeing Eye Institute which is 2 towns away - something with animals (normally these jobs dont pay well at all!) so I would have to be rich enough to live from other sources ...heh.
